A Divine Chicken Divan

The Mister and I are always on the look out for delicious low carbohydrate, gluten free meals that are quick and don’t require obscure ingredients … what the hell is “sorghum” anyway???

And usually that search begins with a couple of left over or close to expiration ingredients that need to be used pronto.  Last week the stars aligned and I found what has since been added to the “Absolute Favourite – Make Every Week” list! We seriously have one of those!  And along with a that I’ve also found a  new go-to website for low-carb recipes – “Linda’s Low Carb Menus & Recipes”.

This dish was mouthwatering!  And even better the second and third time!  But I won’t ramble on any more — here’s the recipe:

Broccoli Chicken Divan (modified from Linda’s version)

  • 4 cups diced cooked chicken
  • 14-16 ounces fresh broccoli florets, steamed
  • 8 ounces shredded cheddar cheese
  • 2 tablespoons butter
  • 1 small onion, diced
  • 8 ounces fresh mushrooms, sliced
  • 1/2 teaspoon cornstarch
  • 1 cup chicken broth
  • 1 cup half & half
  • 1/4 cup sour cream
  • 1/8 teaspoon curry (the MAGIC ingredient)
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1/2 cup grated parmesan cheese

Preheat your oven to 350°F.

Steam the broccoli in a pot with 1 inch of water – bring to a boil for 4 minutes, turn off and let sit for 5 minutes.  Meanwhile, in a skillet, saute celery, mushrooms and onions in the butter until tender.  Sprinkle with cornstarch and stir in.  Stir in broth, cream and sour cream and bring to a boil, turning the heat down to medium to simmer until the sauce thickens.  Stir frequently. Stir in the mayonnaise until blended.  Add the curry powder and season with salt and pepper.

In a greased 9×13 glass baking dish, mix chicken, broccoli and cheese.  Pour the mushroom sauce over and mix.  Sprinkle parmesan over top.  Bake for 35-40 minutes until bubbly and browned on the top.

This makes approx 8 servings and can be frozen.
