Italian Tomato Sausage Soup

Fall has definitely landed – and I ‘m in a total nesting phase. I’ve recently done an entire closet purge and several decor updates throughout the house – which I will share over the next few weeks.
One of the signs I’m nesting is my sudden love of soups. If you ask the Mister, he’d tell you I’m not a soup lover. He knows because he is a HUGE soup fan and every time he suggests soup he gets the big ol’ negative head-shake from me :). But lately, whenever I’m looking for a recipe I more often than not land on something soupy.
To use up some spicy sausage meatballs recently, I went browsing and landed on Aggie’s Kitchen recipe for Italian Orzo Soup with Sausage Meatballs, Spinach and Tomato. Since we are avoiding carbs and are only two, I modified the recipe to remove the orzo. Here’s were we ended up:
Italian Tomato Spinach Sausage Soup
What you need:
- 1 tablespoon olive oil
- 1/2 chopped onion
- 2 minced garlic cloves
- 1 chopped celery stalk
- 2 cups chicken broth (I only had veggie broth, so used that)
- 1 can diced tomatoes
- 1 cup water
- 2 frozen spinach nuggets
- 1 tsp dried oregano
- 1 tbsp dried parsley
- Sale & Pepper to taste
- 1/2 lb fresh Spicy Italian Sausage (3 sausages)
What you do:
- In a large pot, heat olive oil over medium heat and add onions, garlic and celery. Saute for 2-3 minutes until all starts to soften.
- Add tomatoes, chicken stock, water, frozen spinach, oregano, parsley, salt and pepper. Bring to a boil.
- Meanwhile, open up the sausages and roll into small bite-sized meatballs.
- Add sausage meatballs. Bring to another boil then let simmer on low heat for 15-20 minutes.
- Taste for salt and pepper and adjust.
- Serve with fresh Parmesan cheese.
The spicy sausage gave the soup a little zing. If you don’t want zing, choose a non-spicy sausage. We had enough soup for a total of 4 large servings. The recipe can be easily doubled for a larger batch which would freeze nicely. Also, if you use Gluten-Free sausage, this is totally a GF recipe!

Yes Lisa, they are in the frozen section. Basically they are ice-cubes of spinach. I use them often to add to omelettes, soup, sauces, etc… Very handy!
