A Kale Success

So KALE. Superfood, right? Popping up on restaurant menus everywhere. Front and centre in the produce section of the grocery store.  Google returns pages and pages of recipes.  Raw, cooked, soups.  However you like it.

Not one to let a food trend pass me by, I’ve tried kale a couple of times. The first was delicious, the second totally opposite. Both were salads, the difference was the texture.  In the second salad, the kale was very tough and not very tasty. I was so disappointed. 

But I wasn’t giving up so easy.  So  in my usual style I hit Google to find out what to do with this spiky green plant to make it appetizing.

And that’s when the miracle occurred – literally folks – there was a bright light and angels were singing!  I should probably mention that I was sitting outside in the sunlight listening to the birdies *wink*.  What was the miracle, you ask?  A massage!  Yes, you heard right – massage!  Massaging your kale will make it less coarse, less spiky and much more flavourful.  I know!!!

Massaging kale is somewhat less enticing than a dimly lit room with soft music playing, but the result is theoretically the same — relaxation.  Rather than describe the process, I will let the experts give you the low down:

Once I had my kale ready, I made this delicious salad:

  • 1 large bunch of kale “massaged”
  • 1 apple diced
  • 1/3 cup of cubed feta
  • 1/4 cup chopped pecans
  • 1/4 cup chopped figs
  • 1 tbsp of apple cider vinegar
  • squeeze juice of 1/4 lemon

Aaand voila … relaxed kale salad

    I’m going to give this a try. The only way I can eat kale is baked into chips or mixed into green salad. It grows like mad in my garden though so it would be good to find a few more ways to eat it!
